Lean Meat Yield Measurement

This project has a number of quantifiable targets that will demonstrate outcomes, including:

  1. Adoption of new methods to predict lean meat yield (LMY) in up to 4 abattoirs;
  2. Development of processor specific supply chains with a focus on LMY; and
  3. Economic analysis on increasing LMY through specified abattoirs.

 

The Sheep CRC in collaboration with MLA advises on the range of technologies for carcase measurement which are required for the calculation of lean meat yield, including:

  • GR probe;
  • Eye muscle depth and C fat depth probe (under development with MLA and the Sheep CRC);
  • VIASCAN - GR depth or full lean meat yield prediction;
  • Ultrasound;
  • 2-D X-rays;
  • CAT scanning.

  • Identification of appropriate in-plant lean meat yield measurement technologies;
  • The value of lean meat yield measurement and management is estimated to be $1 - $10 per carcase. This is specific to every supply chain and increase very significantly when the supply chain undertakes excessive fabrication and value adding.
